So we are all well and truly stuck into lockdown 3.0 and I’m sure like us you are all struggling for inspiration for recipes to keep your spirits up, as well as ones that you are also keen to make and that are good for you.

With the plethora of delivery options available these days, it's so easy to slip onto the sofa and tap away. Well fear not! As we have teamed up with U:ME and here we will share our top tips for healthy comfort eating – without the guilt. Get off that sofa and start shaking those pans!

The main recipe is an absolute cracker of a ‘fakeaway’: our Broccoli and Prawn peanut stir-fry with crispy peanuts! But first some canny hints and tips for healthy comfort eating – healthy snacks, using the right oils… 

  • Hit your hot pan with some U:ME Coconut Oil Blend, add in some spices of your choice (we love using curry leaves, coriander and cumin), tip in some drained chickpeas. Toss well and, once browned, drain. And voila – a delicious snack or a cracking topping for a salad, hummus etc.

  • Versatile for sweet or savoury tastes: popcorn! Whether you’re five or 50, popcorn is a real crowd pleaser. Generously spritz a saucepan with U:ME Coconut Oil Blend over a medium heat. Add the kernels and make sure they are all coated. Pop on a lid and pop away. Season as you wish.

  • In a large bowl, add a generous glug of U:ME Vegetable and Olive Oil Blend, seasoning and the zest of a lemon. Add in a bag of kale, mix well and bake at 200 degrees until brown and crisp. A great and healthier change from potato crisps!

  • Chop up some pitta breads, spritz with U:ME Coconut Oil Blend, season generously and bake at 200 degrees until brown and crisp – delicious on their own or with any dips.

Prawn and broccoli stir fry

And now for the main event – our recipe for Broccoli and prawn peanut stir-fry with crispy peanuts!

Serves 4

15 minutes to prepare
15 minutes to cook

 Ingredients

U:ME Coconut Oil Spray
400g tender stem broccoli
1 carrot
8 garlic cloves
2 thumb sized pieces of ginger
1 tbsp tomato puree
2 red chillis
1 tbsp marmalade
1 tsp cumin seeds
4 tbsp dark soy sauce
2 tablespoons rice vinegar
100g peanut butter
The juice of 1 lime
400g raw prawns, de-shelled
Salt & pepper

Crispy peanuts
U:ME Coconut Oil Spray
100g raw peanuts, crushed
Pinch of hot chilli powder
1 tsp salt
Zest & juice of 1 lime

Coriander to dress
200g white rice cooked to packet instructions

Allergens: peanuts, gluten, shellfish

Instructions

Before cooking, prep all of the ingredients as the cooking process is quite short!

Slice the broccoli into bitesize pieces, grate the garlic and ginger and finely slice the chillis and carrot.

Cook your rice according to pack instructions and keep warm ready to be plated.

Put a wok on a high heat and spray liberally with U:ME Coconut Oil Spray until the pan is glistening. Add the broccoli and stir-fry for 3-4 minutes, or until the broccoli is beginning to soften and caramelize. Turn down the heat slightly and add the carrot, garlic, ginger, chillis, tomato puree and cumin seeds and cook for another minute.

Mix together the marmalade, soy sauce, vinegar, peanut butter and lime juice. Add the prawns to the mixture and coat well. Turn the heat back up to high and add to the wok, stirring constantly until the prawns are cooked.

 Transfer to a bowl ready for serving. Wipe down the wok and spray liberally with U:ME Coconut Oil Spray. Add the crushed peanuts, spices and seasoning and cook until beginning to brown. Add the lime juice and zest and remove from the heat.

 To plate, top the rice with the stir-fry with the crushed peanuts and coriander.
