Lavazza Coffee-rubbed steak, pesto and cream cheese sandwiches

Doesn’t get much better than a steak sarnie and ours brings the flavour in spades! This incredible Lavazza coffee rub brings out the flavor of the beef for a truly tasty lunch - and perfect for a picnic!

Ingredients:

For the rub
2 tablespoons Lavazza Tierra Peru Ground Coffee
1 tablespoon smoked paprika
1 teaspoon hot chilli powder
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon freshly ground black pepper 

For the pesto and cream cheese
100g spring onions
30g pine nuts
Small bunch parsley
1 clove garlic
100ml olive oil
250g cream cheese
1 small handful basil
1 small handful parsley 

2 250g steaks (we love sirloin for this, but any will do!)
2 tablespoons olive oil
Focaccia / ciabatta 

Instructions:

Mix all of the rub ingredients together and massage into the steaks. Allow to infuse for 1-2 hours.

Whilst the steaks are marinating make the pesto. Char the whole spring onions in a very hot pan until beginning to burn. Take off the heat and blitz together with the pine nuts, garlic, parsley and oil. Season with a pinch of salt and allow to cool.

To make the cream cheese filling finely chop the herbs and mix together the cream cheese and chill.

When ready to cook the steaks drizzle them in oil and sear in a very hot pan for a couple of minutes each side until nice and brown. Turn down the heat a little and cook until a thermometer reads 55 degrees for medium. Allow to rest for 10 minutes.

Slice the steak as thinly as possible. Assemble the sandwiches and enjoy!
